This wild rice salad is packed with flavor and  high in fiber! Try this next time you need a quick and filling lunch.

You’ll need:

  • 2 cups wild rice (uncooked)
  • 6 large carrots
  • 2 apples

Vinaigrette:

  • 3 Tbsp white wine vinegar
  • ½ lemon juiced
  • 1/3 cup olive oil
  • 2 Tbsp Dijon mustard
  • ¾ tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ ground red pepper

 

Preparation:

  1. Cook wild rice.
  2. While rice is cooking, dice carrots and apples into small pieces.
  3. To make vinaigrette, add all ingredients into bowl or jar and whisk until well combined.
  4. Once wild rice is fully cooked, mix carrots and apples into pot. Then add vinaigrette dressing and mix until evenly coated.
