
This wild rice salad is packed with flavor and high in fiber! Try this next time you need a quick and filling lunch.
You’ll need:
- 2 cups wild rice (uncooked)
- 6 large carrots
- 2 apples
Vinaigrette:
- 3 Tbsp white wine vinegar
- ½ lemon juiced
- 1/3 cup olive oil
- 2 Tbsp Dijon mustard
- ¾ tsp salt
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ ground red pepper
Preparation:
- Cook wild rice.
- While rice is cooking, dice carrots and apples into small pieces.
- To make vinaigrette, add all ingredients into bowl or jar and whisk until well combined.
- Once wild rice is fully cooked, mix carrots and apples into pot. Then add vinaigrette dressing and mix until evenly coated.
