Now THIS is a recipe you will want to save for your next outdoor gathering. The watermelon bowl is a statement and in the summer time we can’t think of anything better than a salad with juicy watermelon. 

Have you ever had watermelon with salt and pepper? It makes the watermelon taste sweeter. The same concept goes with the salty feta cheese in this recipe. Feta cheese has a strong flavor- a little bit goes a long way!

The first step is choosing the right watermelon. You want a watermelon that is heavy for its size, has a yellowish spot where the watermelon rested on the ground during ripening, and you want it to thud when you hit it with the palm of your hand. 

Watermelons are great for hydration, immune health and repair (vitamin C), and muscle contractions/ nerve transmission (potassium). 


1/3 cup lime juice

1 tablespoon olive oil

2 teaspoons honey


6 cups spring greens

1 avocado

1 stalk green onion

1 pound shrimp, peeled and deveined

Cajun seasoning to taste

2 cups watermelon

¼ cup feta cheese

Suggested modifications:

Need less fat? Omit the feta and avocado

Need more vegetables? Mix in another type of lettuce like crunchy romaine or spicy arugula

Need more starch? Add grilled corn on the cob
