Even if you are not vegan, you are going to want to try this vegan mac and cheese! We love Banza pasta for this recipe, because it is made out of chickpeas and pea protein, making it a great high quality plant based protein option! It is also higher in fiber compared to traditional pasta!

You will need:

  • 1 box Banza mac and cheese
  • 1 zucchini, chopped
  • ½ cup mushrooms, sliced
  • 1 red bell pepper, diced
  1. Preheat oven to 375. Place chopped veggies on a sheet pan and roast in the oven for 10-15 minutes.
  2. While veggies are cooking, prepare mac and cheese according to the box.
  3. Split all ingredients into 2 servings and enjoy!
