The weather is finally starting to cool off here in NC, which means it’s soup season! We are easing into the cool weather with this yummy taco soup. This is the perfect recipe to throw in the crockpot and let cook while you watch football, shop, go apple picking, and do all of the fun fall things!

Makes 8 servings
– 2 lbs Ground turkey
– 28 oz can diced tomatoes
– 15 oz can black beans
– 15 oz can kidney beans
– 15 oz can corn
– 4 bell peppers, diced
– low sodium taco seasoning

Cook on low for 6-8 hours, when done separate into 8 containers and get ready to not have to cook for the rest of the week! Once you are ready to serve, top with 2 Tbsp avocado
