Next time you’re looking for a warm and hearty meal, try this delicious chilli with turkey, sweet potatoes and beans.

 

You’ll need:

  • 4 Cups Chicken broth
  • 1 large sweet potato, diced
  • 1 can pinto beans
  • 1 can black beans
  • 1 lb. ground turkey
  • 1 can diced tomatoes
  • 1 large onion diced 
  • 4 cloves garlic
  • 2 Tbsp olive oil
  • 1 jalapeño pepper (seeds removed) 
  • 4 tsp Cumin
  • 2 Tbsp Chili powder
  • ½ tsp chipotle chili powder
  • ½ tsp Salt
  • 2 limes juiced
  • Topped with cilantro

Directions:

  1. Heat oil in a dutch-oven over medium-high heat. Add sweet potato and onion and cook, stirring often, until the onion is beginning to soften, about 4 minutes. Add garlic, chili powder, cumin, chipotle and salt and cook, stirring constantly, for 30 seconds. 

2.Add chicken broth and bring to a simmer. Cover, reduce heat to maintain a gentle simmer and cook until the sweet potato is tender, 10 to 12 minutes.

3.In a separate pan cook turkey on medium heat until browned. Then add into dutch-oven once cooked.

4.Add beans, tomatoes and lime juice; increase heat to high and return to a simmer, stirring often. Reduce heat and simmer until slightly reduced, about 5 minutes. 

5.Top with topped cilantro when served. 

Serving Size: About 1.5 cups or 1/6th of the recipe.
