
Next time you’re looking for a warm and hearty meal, try this delicious chilli with turkey, sweet potatoes and beans.
You’ll need:
- 4 Cups Chicken broth
- 1 large sweet potato, diced
- 1 can pinto beans
- 1 can black beans
- 1 lb. ground turkey
- 1 can diced tomatoes
- 1 large onion diced
- 4 cloves garlic
- 2 Tbsp olive oil
- 1 jalapeño pepper (seeds removed)
- 4 tsp Cumin
- 2 Tbsp Chili powder
- ½ tsp chipotle chili powder
- ½ tsp Salt
- 2 limes juiced
- Topped with cilantro
Directions:
- Heat oil in a dutch-oven over medium-high heat. Add sweet potato and onion and cook, stirring often, until the onion is beginning to soften, about 4 minutes. Add garlic, chili powder, cumin, chipotle and salt and cook, stirring constantly, for 30 seconds.
2.Add chicken broth and bring to a simmer. Cover, reduce heat to maintain a gentle simmer and cook until the sweet potato is tender, 10 to 12 minutes.
3.In a separate pan cook turkey on medium heat until browned. Then add into dutch-oven once cooked.
4.Add beans, tomatoes and lime juice; increase heat to high and return to a simmer, stirring often. Reduce heat and simmer until slightly reduced, about 5 minutes.
5.Top with topped cilantro when served.
Serving Size: About 1.5 cups or 1/6th of the recipe.
