You will need:
– 4 cups sweet potato, cubed
– 1 (15 oz) can black beans, drained and rinsed
– 1 cup uncooked quinoa, rinsed
– 2 cups vegetable broth
– 2 tsp cumin
– 1 tsp chilli powder
– 1 tsp garlic powder
– ½ cup green onion, chopped
Directions:
1. Preheat oven to 375
2. Combine all ingredients except green onions in a 9×13 casserole dish and cover with aluminum foil
3. Bake for 45 minutes
4. Remove foil and bake for an additional 15 minutes
5. Remove from oven and allow to cool for 5-10 minutes
6. Split into 4 servings
