What’s your favorite day of the week? Ours is whatever day we are having these sweet potato nachos! 😍

You will need:
– 4 medium or 3 large sweet potatoes
– 1 lb chicken breast, boiled and shredded
– 3 bell peppers, chopped
– 1 red onion, chopped 
– 1 oz shredded mozzarella 
– 2 Tbsp guacamole

1. Preheat oven to 400
2. Slice sweet potatoes into 1/4-inch rounds
3. Toss with olive oil and season with salt and pepper
4. Bake for 20 minutes
5. Flip the potatoes and bake for an additional 10 minutes
6. Remove from the oven and top with shredded chicken, peppers, onions and cheese and put back in the oven for 5 minutes
7. Split into 4 servings and enjoy!
