
Ready for a go-to easy snack, breakfast, or sweet treat? These Peanut butter banana oat cookies are packed with healthy fiber and plant protein to keep you full and satisfy your sweet tooth.
Ingredients
- 3 bananas
- ½ cup peanut butter
- 2 Tbsp brown sugar or honey
- ½ tsp salt
- ½ tsp cinnamon
- ¼ cup ground flaxseed
- 1.5 cups oats (ground into a flour)
- ½ cup rolled oats
- ½ cup Unsweetened coconut flakes
- 1/3 cup chocolate chips
Directions
- Preheat oven to 350.
- Line a baking sheet with parchment paper.
- In a large bowl mash bananas until smooth.
- Add in peanut butter and stir into bananas until well combined.
- Next add sugar, salt, cinnamon, flaxseed and stir well.
- Add ground oat flour and stir until smooth, then add in coconut flakes, regular rolled oats, and chocolate chips and stir until well combined.
- Place and form dough into cookie shape on parchment paper (hint – these cookies will not naturally flatten out in oven, so shape how you want them to be in their final state – batch makes 14 cookies)
- Cook for 10-12 minutes.
- Remove from oven and let rest for 5 minutes before enjoying.
