Ready for a go-to easy snack, breakfast, or sweet treat? These Peanut butter banana oat cookies are packed with healthy fiber and plant protein to keep you full and satisfy your sweet tooth. 

 

Ingredients

  • 3 bananas
  • ½ cup peanut butter
  • 2 Tbsp brown sugar or honey
  • ½ tsp salt
  • ½ tsp cinnamon
  • ¼ cup ground flaxseed
  • 1.5 cups oats (ground into a flour)
  • ½ cup rolled oats 
  • ½ cup Unsweetened coconut flakes
  • 1/3 cup chocolate chips

 

Directions

  • Preheat oven to 350.
  • Line a baking sheet with parchment paper.
  • In a large bowl mash bananas until smooth.
  • Add in peanut butter and stir into bananas until well combined.
  • Next add sugar, salt, cinnamon, flaxseed and stir well.
  • Add ground oat flour and stir until smooth, then add in coconut flakes, regular rolled oats, and chocolate chips and stir until well combined.
  • Place and form dough into cookie shape on parchment paper (hint – these cookies will not naturally flatten out in oven, so shape how you want them to be in their final state – batch makes 14 cookies)
  • Cook for 10-12 minutes.
  • Remove from oven and let rest for 5 minutes before enjoying.
