Quinoa black bean stuffed peppers is another colorful plant based option to add to your lineup! Quinoa is a great option for anyone, but especially our plant based friends because it is a grain that is high in protein. It is also a complete protein, which means it contains all nine essential amino acids. It is also much higher in fiber than other grains. You can have it warm like rice or let it chill and throw it into salads to add a nutritional boost!
You will need:
– ¾ cup uncooked quinoa
– 15 oz can black beans
– 15 oz can corn
– 4 large bell peppers
– ⅔ cup salsa
– 2 Tbsp nutritional yeast
– 1 ½ tsp cumin
– 1 tsp paprika
– 1 tsp chili powder
1. Cook quinoa according to package instructions
2. Preheat oven to 350
3. Cut bell peppers in half, remove stems and seeds
4. Rinse and drain corn and black beans
5. Add quinoa, beans, corn, salsa, nutritional yeast, cumin, paprika, and chili powder to a large bowl and mix until combined
6. Place open peppers in a 9×13 dish and stuff them with the filling
7. Cover with aluminum foil and bake for 35-40 minutes. Remove foil and bake 10 minutes
8. Serve!
