Our clients are always looking for ways to get in more protein and these protein packed mashed potatoes are a perfect way to do it! By using ingredients like skim milk and nonfat greek yogurt and whole milk, we really lowered the fat content and increased the protein content of this recipe! Of course there is nothing wrong with having mashed potatoes made with whole milk and a little more butter from time to time. If you find yourself wanting to be more intentional with where your calories are coming from, this is a great way to manage it!
You will need:
– 2 lbs potatoes (chopped into one inch pieces)
– ½ cup plain, nonfat greek yogurt
– ½ cup skim milk
– 2 Tbsp butter or ghee
– 1 tsp salt
– 1 Tbsp chopped rosemary
1. Place chopped potatoes into a large pot and fill with water until potatoes are covered. Bring to a boil over medium-high heat and let boil for 15-20 minutes.
2. Drain and place the potatoes in a large bowl. Add greek yogurt, milk, butter, salt and rosemary and mash and stir (or mix) to combine.
