These cookies are the perfect quick and healthy option to satisfy your sweet tooth! 

You’ll need:

  • 1.5 Oats (ground into flour)
  • ½ Cup rolled oats (not ground up)
  • ½ Cup Peanut Butter
  • 2 Large Bananas 
  • 2 Tbsp Honey
  • 2 Tbsp Brown Sugar
  • ¼ cup Dark Chocolate Chips 
  • ½ tsp Salt
  • 1 tsp Cinnamon

Preparation:

  1. Preheat oven to 350.
  2. Grind 1.5 cups oats into a flour (using mini blender). 
  3. In a large bowl, mash the bananas until they begin to become liquid. 
  4. Add peanut butter, honey, brown sugar, salt, cinnamon, and stir until well combined.
  5. Add in the ground oat flour and stir until fully combined.
  6. Stir in regular rolled oats and dark chocolate chips until combined
  7. Line a baking sheet with parchment paper. Using two spoons, scoop 14 cookies onto parchment paper. Shape the cookies and flatten down as they will not flatten on their own.
  8. Bake for 10-12 minutes.
  9. Remove and set on cooling rack at least 10 minutes. 
  10. Enjoy!
