
These cookies are the perfect quick and healthy option to satisfy your sweet tooth!
You’ll need:
- 1.5 Oats (ground into flour)
- ½ Cup rolled oats (not ground up)
- ½ Cup Peanut Butter
- 2 Large Bananas
- 2 Tbsp Honey
- 2 Tbsp Brown Sugar
- ¼ cup Dark Chocolate Chips
- ½ tsp Salt
- 1 tsp Cinnamon
Preparation:
- Preheat oven to 350.
- Grind 1.5 cups oats into a flour (using mini blender).
- In a large bowl, mash the bananas until they begin to become liquid.
- Add peanut butter, honey, brown sugar, salt, cinnamon, and stir until well combined.
- Add in the ground oat flour and stir until fully combined.
- Stir in regular rolled oats and dark chocolate chips until combined
- Line a baking sheet with parchment paper. Using two spoons, scoop 14 cookies onto parchment paper. Shape the cookies and flatten down as they will not flatten on their own.
- Bake for 10-12 minutes.
- Remove and set on cooling rack at least 10 minutes.
