If you are looking for an easy breakfast to meal prep this week, this peanut butter banana oatmeal bake was made for you! This recipe makes enough for 6 servings which can last you almost through the whole week, and did we mention, it’s delicious? 🤤

You will need:

– 2 cups rolled oats

– 1 tsp baking powder

– 2 tsp cinnamon

– 1/2 tsp salt

– 1 ½ cup milk 

– 1 egg

– 1 tsp vanilla

– ¼ cup natural peanut butter

– 4 ripe bananas 

Directions: 

1. Preheat oven to 350

2. Combine oats, baking powder, cinnamon and salt in a medium bowl

3. Add milk, egg, vanilla and peanut butter and stir to combine

4. Mash 2 bananas and fold into the oatmeal mixture and slice the other 2 bananas into ¼ inch slices

5. Put half of the banana slices on the bottom of a greased 8×8 dish and spread the oatmeal mixture over the slices. Place the remaining banana slices on the top of the mixture

6. Bake for 35-40 minutes
