Oatmeal cups are always a great way to meal prep an easy breakfast. These apple crisp oatmeal cups are a great way to start your day off with the perfect balance of carbs, protein, fat and fiber!

You will need:

– ½ cup unsweetened applesauce

– ½ cup peanut butter

– 2 large eggs

– ¼ cup honey

– 1 tsp vanilla

– 1 cup milk of your choice

– 2 cups oats

– 1 tsp baking powder

– 2 tsp cinnamon

– ¼ tsp nutmeg

– ¼ tsp salt

– 1 medium apple, finely chopped

Directions:

1. Preheat oven to 350

2. Mix together applesauce, peanut butter, eggs, honey, vanilla, and milk in a medium bowl until combined

3. Add in oats, baking powder, cinnamon, nutmeg and salt and stir until combined well

4. Fold in the apples

5. Place batter in muffin tin lined with muffin liners and distribute evenly. Bake for 25-30 minutes
