This healthy nutty brown rice salad pairs well with grilled chicken skewers, burgers, and hot dogs! 

Ingredients:

3 cups chopped lettuce (3 veg)

2 cups cooked brown rice (6 starch)

1 cup chopped parsley ( 1 veg)

½ cup toasted walnuts (2 fat)

¼ cup sunflower seeds (4 fat)

1 lemon, juiced

¼ cup extra virgin olive oil (12 fat)

2 roma tomatoes, seeded and diced (2 veg)

Salt and pepper to taste

Makes 8 Servings
