Nothing is easier than throwing a quick salad together on a busy weeknight! Try to grill/bake the chicken ahead of time on a night when you have extra time. That way on a busy night when dinner time rolls around all you have to do is combine all of the ingredients for a yummy, nutrient dense salad!

– 2 cups spinach
– 1/2 cup chickpeas
– 2 Tbsp dried cranberries
– 4 oz cooked chicken breast
– 2 Tbsp Italian dressing
