While spending more time at home this is a great opportunity to get more comfortable in the kitchen! This italian chicken and herb roasted veggies is everything you need for an easy dinner. Get the whole family involved for a fun night time routine that can carry over once this is all over!
Veggies:
– 4 cups green beans
– 2 cups baby carrots
– 1 1/2 pounds baby red potatoes (cubed)
– 2 Tbsp olive oil
– 1 Tbsp rosemary
– 1 Tbsp thyme
Chicken:
– 1 lb raw boneless skinless chicken breasts split into 4 servings
– Italian dressing
– Italian seasoning
1. Marinate chicken breast in italian dressing for at least 2-3 hours
2. Preheat oven to 350 degrees
3. In a large bowl, combine potatoes, carrots, 1 Tbsp olive oil, thyme and rosemary
4. Spread onto baking sheet
5. Place marinated chicken in oven safe dish and sprinkle with italian seasoning
6. Place both dishes in the oven for 45 minutes
7. After 25 minutes remove the veggies and add the green beans and other 1 Tbsp of olive oil. Return to the oven for the remainder of the cook time
