You guys may have noticed that we have been posting quite a few instant pot recipes recently. If you’re not sure what an instant pot is, it is a slow cooker, pressure cooker, rice cooker, steamer, yogurt maker, warmer, and it can sauté/brown foods all in one. It is a great appliance and can make cooking at home a lot easier and faster. Many of our clients are catching on to how great they are and requesting more recipes so we are providing, like this instant pot creamy chicken soup! You will need:

– 1 Tbsp olive oil
– 1 onion, diced
– 1 stalk celery, diced
– 1 cup chicken broth
– 1 lb chicken breast
– 2 cups baby potatoes, halved
– 1 cup baby carrots, halved
– 1 can low sodium cream of chicken soup
– ½ cup milk
– 1 oz pack ranch seasoning
– 16 oz spinach

1. Turn saute mode on the instant pot. Once the pot is heated, add 1 Tbsp olive oil, onions and celery. Cook for about 5 minutes then add chicken broth and scrape up any bits that could be stuck to the bottom
2. Add chicken, potatoes and carrots to the pot, lock the lid and cook for 8 minutes on manual pressure. Quick release the valve when done
3. Take the lid off and change the mode to soup, add the cream of chicken soup, milk, and ranch seasoning
4. Let the soup simmer for about 5 minutes, and at the last minute stir in the spinach until wilted

Makes 4 servings
