We are always looking for fun new recipes to make in the instant pot! This chicken pad thai is a 20 minute dinner that is full of flavor!

You will need:

– 1 Tbsp olive oil

– 1 lb chicken breast, diced

– 4 cloves minced garlic

– 3 Tbsp coconut aminos

– ½ cup pad thai sauce

– 1 ½ cups water

– 7 oz rice noodles

– 1 cup carrot matchsticks

– ½ red pepper, sliced

– ⅓ cup fresh cilantro

Directions:

1. Add olive oil, chicken, garlic, soy sauce, pad thai sauce, water and rice noodles to the instant pot. Leave noodles floating above the other ingredients. Pressure cook on high for 2 minutes. 

2. When complete, quick release the steam.

3. Add carrots and bell peppers, put the lid back on and let it sit for 5 minutes

4. Remove the lid and serve!
