Who is using this extra quarantine time to try some new recipes?? I know we are! Here is a great, easy one to try at home! Let’s think about the positives of being safe at home during this quarantine, like the fact that we are all going to come out of this as 5 star cooks 😜

Honey Dijon Chicken and veggies

You will need:

– 2 Tbsp olive oil

– 3 Tbsp honey

– 1 Tbsp dijon mustard

– 3 cloves garlic, minced

– ½ tsp oregano

– ½ tsp basil

– 16 oz red potatoes, diced

– 4 boneless skinless chicken breasts 5-6 oz each

– 4 cups broccoli

1. Place 1 Tbsp olive oil, honey, dijon mustard, garlic, oregano, and basil into a small bowl and whisk

2. Pour half of the sauce into a large bowl and marinate chicken with it for an hour. Save the other half of the sauce for later.

3. Preheat oven to 400

4. Toss potatoes with the other 1 Tbsp of olive oil and put them on a sheet pan lined with foil and lay the chicken breasts on top. Place broccoli on the pan and drizzle the rest of the sauce over the broccoli.

5. Bake 35 minutes or until the chicken is cooked through
