Knowing how to make your own ricotta cheese from 2% lowfat milk saves a trip to the grocery store! It also is free from stabilizers like guar gum, xanthan gum, and locust bean gum.
½ gallon 2% milk
⅓ cup lemon juice
Strainer
Cheesecloth
Heat milk to 200F slowly over medium heat
Remove from heat. Add ⅓ cup lemon juice. Stir (it will start to curdle). Strain through a cheesecloth for at least 10 minutes.
