Tis the season for healthy pumpkin bread! We are loving all things pumpkin right now and this pumpkin bread is at the top of the list! Did you know that pumpkin is actually considered a fruit? That’s right! Pumpkin is a great source of vitamins and minerals and also low in calories. Pumpkin can be a great source of vitamin A and antioxidants (hello, healthy immune system). It is also a good source of potassium, vitamin C, and fiber which can benefit heart health. Just a few more reasons to eat all of the pumpkin during this fall season! 

You will need:

– ½ cup honey

– ⅓ cup coconut oil, melted

– 2 eggs

– ¼ cup almond milk or water

– 1 cup pumpkin puree

– 1 tsp pumpkin spice

– 1 tsp baking soda

– 1 tsp vanilla extract

– ½ tsp salt

– 1 ¾ cups whole wheat flour

Directions:

1. Preheat oven to 325

2. In a large bowl, beat honey, oil and eggs until blended

3. Mix in milk, pumpkin puree, pumpkin spice, baking soda, vanilla and salt and wish until combined.

4. Stir in the flour, just until combined (do not over mix)

5. Pour into a greased 9×5 loaf pan and cook for 1 hour. Let cool before serving!
