Try this easy healthy 5 minute omelette for breakfast or even breakfast for dinner! Now is a perfect time to visit your local farmers market for fresh fruit and veggies. There is nothing better than supporting local farmers and getting tasty, fresh fruits and veggies!
You will need:
– 2 whole eggs
– 2 egg whites
– ½ cup vegetables (we used chopped bell peppers)
– 1 oz cheese
– 1 cup fresh fruit
Directions:
Beat eggs in a bowl until mixed well. Spray a small to medium skillet over medium heat with cooking spray and pour eggs into the pan. As the eggs start to set, once the bottom is set but the top is still a little wet, sprinkle cheese and veggies on half the omelette. Fold the over side over and slide it onto your plate. Pair with fruit and enjoy!
