If you’re in the mood for something really light, fresh, and simple, this is it! Assemble in less than 30 minutes. Even non-experienced cooks can make it.

5 tbsp olive oil, divided

1 tbsp salt-free cajun seasoning

1 lb frozen shrimp, peeled

3 cups parsley

5 cloves garlic

8 corn tortillas

Directions:

  1. Defrost and peel shrimp. If your shrimp is still frozen, run it under water while you peel it. (Discard the shells, or freeze them in a ziplock bag to make a seafood stock later)
  2. Heat 2 tbsp olive oil in a pan
  3. Add salt-free cajun seasoning
  4. When fragrant, add the shrimp. Cook until just pink (145F internal temperature)
  5. In a food processor, blend 3 cups of parsley and 5 cloves of garlic with 3 tablespoons of olive oil
  6. Evenly distribute the parsley mixture and shrimp on 8 corn tortillas

Serves 4 (2 tacos per person)

Salt-Free Cajun Seasoning:

2 tsp paprika

2 tsp garlic

1 tsp onion powder

1 tsp black pepper

2 tsp oregano

1 tsp red pepper flakes

1 tsp dried parsley
