You may have tried fried rice before, but have you ever tried fried quinoa?? If you are vegetarian or just trying to eat less meat, quinoa is a great swap for a higher protein grain! Try this meatless fried quinoa and let us know if you feel like your back at the hibachi grill!
You will need:
– 1 Tbsp olive oil
– 2 cups cooked quinoa
– 4 cups edamame, shelled
– 2 eggs
– ΒΌ cup coconut aminos
Directions:
1. Put olive oil in a pan on medium high heat. Add quinoa, edamame, and coconut aminos and cook for 3-4 minutes until warm.
2. Push the mixture over to create an opening in the pan. Crack the 2 eggs there and let them cook until the whites are no longer clear.
3. At that point stir in the eggs with the rest of the mixture and cook until eggs are no longer runny
4. Split into 4 servings and enjoy!
