If you’re looking for something to meal prep for this week, try this easy veggie, quinoa salad! The best part of this salad is the homemade peanut dressing! This recipe makes 4 servings.

You will need:

– 1 cup cooked and cooled quinoa

– 1 cup cucumber, diced

– 1 cup celery, diced 

– 1 container cherry tomatoes, halved

Peanut dressing:

– ½ cup peanut butter

– 3 Tbsp coconut aminos

– 1 Tbsp maple syrup

Combine ingredients for quinoa salad in a large bowl. In a small bowl, combine ingredients of peanut dressing. Separate into 4 containers and enjoy!
