Fruit salsa is the way to go in the hot summer months! They’re nature’s hydrators. Ever notice what ingredients are in sports drinks? Sugars and electrolytes. Fruit has both!

Chicken Burger:

½ pound ground chicken

1 egg

1 clove garlic, minced

1 teaspoon Italian seasoning

¼ cup breadcrumbs

Salt and pepper to taste

Cooking spray

Directions:

  1. Combine ingredients in a large mixing bowl. Separate into two chicken burgers (4 ounces each)
  2. Spray a skillet with cooking oil and heat it over medium heat. 
  3. When hot, add the patties
  4. Cook on each side until browned and the inside reads 160℉ on a meat thermometer

Makes 2 servings

Salsa

¼ cup Medium Fresh Cut Salsa from Aldi

½ cup diced pineapple

1 tablespoon diced jalapeno

Makes 2 servings

Exchanges: 0.5 fruit (the rest is “free”)

Customize it!

  • Make your own fresh cut salsa out of tomatoes, onion, cilantro, garlic, lemon juice, and cider vinegar
  • Sub cajun seasoning for italian
  • Use ground turkey instead of ground chicken

Add 1 ounce of mozzarella cheese (+1 protein, +1 fat)
