The new year is a great time to focus on cooking at home more. That includes sweet treats! If you love going out to eat for social reasons, have a friend over and spend time making food together. You will be surprised at how much fun you can have cooking! Tag a friend you would make these dark chocolate peanut butter balls with!
You will need:
Inside:
½ cup peanut butter
2 Tbsp honey
1 tsp vanilla extract
½ cup almond flour
Chocolate layer:
1 Tbsp coconut oil
1 organic dark chocolate bar
Shredded unsweetened coconut for garnish
Directions:
Mix together peanut butter, honey and vanilla
Add almond flour and mix until combined well
Form dough into 12 small balls and place on a pan covered with parchment paper
Place pan in the freezer for at least 10 mins
Place coconut oil and broken apart chocolate bar in a microwave safe bowl and microwave in 30 second intervals until fully melted
Dip hardened peanut butter balls into chocolate mixture to cover, spoon out and place back onto parchment paper
Sprinkle shredded coconut on top and place in freezer to chill for at least 20 minutes
Will keep in an airtight container in the freezer for several weeks
