This is one of our favorite hydrating low-calorie mixed drinks to take poolside. Cream of Coconut (look for it in the international or alcohol aisle at the grocery store) is made from sweetened coconut cream.
Coconut products contain Medium Chain Triglycerides (MCTs). Some people think that because MCTs are used so efficiently by the body that they can achieve ketosis easier. However, coconut products are high in fat and calories, so overeating coconut can make it hard to lose weight. With just a hint of cream of coconut, this coconut lime slushy is low-calorie. We use almond milk for our liquid instead of sugar-sweetened sodas or juices.
1 cup ice
1 cup almond milk
2 tablespoons lime juice
2 tablespoons cream of coconut

Suggested modifications: If you want to make this recipe even lighter, substitute a low-fat coconut milk or use a coconut extract.
