For the sauce:
- ½ avocado
- ¼ cup nonfat plain Greek yogurt
- ½ cup water
- 1 cup cilantro leaves and stems
- 1 Tbsp garlic
- ½ tsp salt
- 1 Tbsp fresh lime juice
Blend all ingredients together and store in the fridge until ready to use.
For the tacos:
– 1 Tbsp olive oil
– 1 lb shrimp
– ½ Tbsp Trader Joe’s chili lime seasoning
– 1 clove garlic
– 8 6“’ tortillas
– 4 cups Shredded cabbage
– 1 Avocado
– Chopped cilantro to garnish
Directions:
1. Put oil in medium pan over medium heat, add shrimp, garlic and seasoning and cook through, 4-5 minutes.
2. Divide cabbage, cooked shrimp, cilantro and avocado into 8 tortillas and top with sauce
