At TNT, we are all about variety and this breakfast quinoa bowl with cinnamon and apples is the perfect way to switch up your normal breakfast routine. This is a great gluten free and vegan option as well! Not included in the recipe, but you can also pair this with walnuts for a healthy fat source to make a balanced breakfast loaded with inflammatory foods! 

You will need:

– ½ cup quinoa

– 1 ½ cups water

– 2 large apples

– 2 tsp cinnamon

1. Peel and core apples, and then chop them into bite-sized pieces. 

2. Combine quinoa, water and apples in a pot and bring to a boil. Once boiling, cover and reduce to simmer. Let simmer for 20-25 minutes until the apples are soft and the water is absorbed. 

3. Stir in cinnamon and divide between two bowls
