You will need:
– 3 cups rolled oats
– 1 tsp baking powder
– 1 tsp cinnamon
– ¼ tsp salt
– 2 eggs
– ¼ cup honey
– 1 cup skim milk
– 1 tsp vanilla extract
– 1 cup blueberries
Directions:
1. Preheat oven to 350
2. Grease muffin pan or add liners
3. Mix oats, baking powder, cinnamon and salt in a large bowl
4. Whisk together eggs, honey, milk, and vanilla in a medium bowl
5. Add wet ingredients to dry and stir to combine
6. Fold in blueberries
7. Fill muffin tin until each cup is full
8. Bake for 25-30 mins, remove from oven and let cool for 10 minutes
Makes 12 muffins.
Exchange for 1 muffin: 1 starch, ½ fruit, 1 meat
