3 tablespoons red wine vinegar

1 tablespoon apricot jam

¼ cup extra virgin olive oil

8 cups chopped lettuce

½ cup sliced peaches

3-4 mini sweet peppers, sliced

Salt and pepper to taste

4 ounces cooked chicken breast

Serves 8, 1 cup each
